For years a friend of mine has been trying to get me to try fish tacos. “Yeah, I’m not really a fish eater..” Well that was just silly. Turns out I love fish, especially fish tacos!
Not only are they healthy, they are quick and easy to make. Tilapia thaws pretty quickly, so no worries if you tend to forget to put your meat in the fridge in the morning.
Here is how I’ve been making them….
For the seasing I mixed:
2 tsp Chili Powder
2 tsp Cumin
1 tsp Garlic powder
1tsp Cracked Black Pepper
Sprinkle over both sides of the fish and then drizzle lightly with Extra Virgin Olive Oil.
Bake at 425 for 18 mintues.
While the tilapia is cooking you can prepare your sides. We like red onion, avacado, sour cream and cilantro.
When the fish is almost done I like to go ahead and heat the corn tortillas. I think this makes a huge difference in the taste!

When the tilapia is done just pull it out of the oven and put it right onto a hot tortilla.
Add your toppings and enjoy!
