Three Quick Recipes from Crockpot Chicken

Well, spring has sprung and we are once again on the run!  Between soccer, gymnastics and everything in between my crockpot has been getting a serious workout.  The chicken dish I’m sharing today can be used for several different dishes-all of them quick!

For this perfect flavorful shredded chicken here’s what you need:

Raw chicken-about 4 or 5 breasts

1 or 2 Bell Peppers

1 or 2 White Onions

2 Cloves fresh Garlic

2 TBS Chili Powder

1 TBS Cumin

1/2 TBS Garlic Powder

Salt/Pepper

Chicken Broth (I use about half the box shown)

Note: To make it even easier use prepackaged taco or fajita seasoning!

All you do is throw everything in the crockpot and cook on low for 6-8 hours.

Once it’s done here are three ways to use it:

1) Sub Sandwiches-Drain off the liquid, put shredded chicken on loaf that has been sliced almost all the way through.  Add some cheese (we like provolone).  Then just toast it in a 400 degree oven for about 10-12 minutes.

2) Pizza Topping- Drain off liquid. Top a premade pizza crust with marinara, add the chicken mix, top with cheese and cook in a 350 degree oven for 15-18 minutes.

3) Fajitas.  Add chicken mix to a tortilla and top with cheese and sour cream.  This one is my favorite-probably because it’s the easiest! 🙂
