Favorite Healthy Meals-Egg White Burritos

Hey there!!  For Tasty Tuesday I am going to be sharing a recipe that came about out of my love for the Starbucks Spinach Feta Wrap.  Since I can’t roll in there every single morning for breakfast, I decided to try to make something similar.  I left out the tortilla since we are watching our carb intake quite a bit.

Here’s what I came up with:



Lets start with the Egg White Tortilla:

1) Spray a large pan with cooking spray.  Turn burner to medium low heat and pour enough egg whites in the pan to cover the bottom of the pan.

118Once it’s cooked through lay it open on a plate.


Now on to the filling…

Here’s what you need to make it:


Fresh Spinach

Grape Tomatoes

2 Cloves of Fresh Garlic

2-3 TBS Olive Oil

Salt to taste

Here’s how you make it:

1) Start out by cooking the garlic in the olive oil over low/medium heat.  (Do not overcook-you will have to stay there at the stove and stir it around.)

2) After a minute or so add a couple big handfuls of the spinach and the tomatoes.  (I usually use about 1/3 of the box of tomatoes.)

Add a couple pinches of salt.


For this recipe I smash the tomatoes while I’m cooking them, but when I use this for other meals I leave them plump.

Cook until the spinach is wilted down.

3) Add Feta and keep stirring until it has melted.(You may need to add a little more olive oil.)

127Once the feta has melted it’s ready to be added to the Egg White “Tortilla.”

 Another low carb option for the filling is to add it to some meatballs…

131We use the pre cooked Italian meatballs from the frozen section at Wal-Mart.  Just toss them on a baking sheet, cook for the recommended time, and then add them to prepared filling.  I usually leave the tomatoes plump for this recipe. 🙂

It’s really tasty, and really healthy-how often does that happen!?! 😉
