Favorite Healthy Dinners-Chili

From the time I got married 11 1/2 years ago I have been making my chili using the McCormick Seasoning packets.  For some reason last fall I just decided that I wanted to stop using the packets all together.  The first recipe I tried was this chili.  I was a little nervous about it because we are big chili eaters.  All my kids like it(well except my extremely picky 3-year old).  I was a little worried they wouldn’t like the change up-but they did. I love it when that happens! 🙂  My husband went bonkers over this chili.  He even ate the left overs for breakfast a couple mornings.  The recipe is pretty simple.  I think fresh garlic and onions are what makes any recipe great-and that’s what was missing from my old recipe.  Something else I started doing was adding V8.  My mom has been trying to get me do this for a while-and I’m glad I finally listened!  Now we can get our veggies, protein and fiber all in one bowl!  Here’s the new and improved recipe! 🙂

Ingredients:

2 pounds extra lean ground beef  or turkey

2 onions, chopped {I use white}

4 cloves garlic, minced

2 tablespoons chili powder 

2 teaspoons salt

2 teaspoons dried oregano

4 (14.5 ounce) cans stewed tomatoes

1 (15 ounce) can tomato sauce

2 cans V8 tomato juice

1-2 cans kidney beans with liquid

1-2 cans black beans

Instructions

  1. Combine ground beef, onion, and garlic in large pot. Cook and stir over medium heat until beef is brown. {If you are using extra lean meat you don’t need to drain it.}
  2. Stir in chili powder, salt, oregano, tomatoes, and tomato sauce.
  3. Heat to boiling, reduce heat to simmer, and cover.
  4. Cook, stirring occasionally, for 1 hour.
  5. Stir in beans and simmer for about another 20 minutes.  Stir it every once in a while.

*OR*-Put beef mixture and remaining ingredients in a crockpot and cook on low for 6-8 hours or on high for 3-4 hours.

Serve with cheese, crackers, cornbread(I really like the jiffy mix), jalapenos, chopped onions….. or whatever else you like!
