Leftovers-Au Jus Beef Paninis

Roast beef ranks pretty high on my list of home cooked comfort foods.  Since the weather turned cold last week I decided to change my menu up a little and we had this on Friday:)
 
Ahhh, yum. 
 It was the perfect meal to come home to after a busy and cold MOPS morning. 
Saturday morning was busy and lunch time rolled around before I knew it.  Instead of just reheating the roast, we tried these:
Au Jus Beef Paninis
I didn’t use dipping sauce, but I could have b/c I prepared the roast the same way as when I do Italian Au Jus Subs.  (For the Italian au jus sub recipe click here.)
To make these Paninis simply reheat the roast from the day before. Put it on some sourdough bread and top if off with some swiss or provolone cheese.  I also added red onions to mine:).  Cook in a panini maker or in a skillet like you would a grilled cheese.
They were really good, I will definitely use this as a leftover option again!
